Gluten-Free Sandwich Bread for the Bread Machine

 

 

 

 

Directions

Have all ingredients at room temperature. Whisk together dry ingredients until thoroughly blended.

In separate bowl, whisk together liquid ingredients until very smooth. Follow your specific machine instructions for adding liquid and dry ingredients in the proper order. Set controls for white bread or medium/normal setting and bake.

Remove baked bread from bread machine and cool thoroughly on wire rack before slicing with electric knife or serrated knife. Makes one 1-1/2 lb. loaf (12 slices).

*For lighter colored bread, use one whole egg and enough egg whites to equal 3/4 cup. For an eggless option use 3 Tb Ener-G Egg Replacer mixed with 1/2 cup & 2 Tb water.

Everyday Bread (Gluten-Free)

Everyday Bread (Gluten-Free)

Delicious everyday bread. This recipe was not tested by Bob's Red Mill. Gluten Free, High Fiber.

Directions

Step 1

Grease a 9x5 bread pan. Combine all the dry ingredients in a large bowl.

Step 2

In another bowl, combine the water, oil and eggs.

Step 3

Add the liquid ingredients to the dry ingredients and mix well.

Step 4

Beat the batter until smooth (can also be done with a mixer).

Step 5

Pour batter into bread pan and smooth out top.

Step 6

Let rise about an hour or until the batter is slightly above the rim of the pan.

Step 7

Bake in a 375°F pre-heated oven for 50 minutes or until internal temperature reaches 190-200°F.

Step 8

Cool briefly (5 min); remove from pan and cool thoroughly on a rack.

Makes 12 servings.

Notes

Cut when thoroughly cold. Makes 12-15 slices. Keeps well wrapped in a cloth for 3 days. Slice and freeze for longer keeping.

*This bread method may produce better results if 2-1/4 tsp Instant Yeast is used in place of the Active Dry Yeast. ~BRM

Gluten Free All Purpose Pizza Crust

Gluten Free Pizza Crust.

Directions

Step 1

Combine yeast, sugar and water in a large bowl and let stand about 5 minutes.

Step 2

Combine dry ingredients in separate bowl. Add egg and oil to wet ingredients, then add dry ingredients. Mix with a hand mixer for a minute, adding a teaspoon of water if dough moves up beaters.

Step 3

Scoop onto greased pizza sheet. Wet your hands with water and spread dough over sheet and smooth. For a thicker crust, let rise for 10 - 15 minutes. Otherwise, continue with the baking directions below.

Step 4

Cover with favorite sauce and toppings. Bake at 425°F for 15-20 minutes.

Notes

*Eggless Option: Combine 1 Tb Flaxseed Meal + 3 Tb Water. Let stand for 5 minutes, then use as egg.
 

Homemade Gluten-Free Pasta

 

Directions

Combine flours, salt, and xanthan gum. Beat eggs lightly and add oil. Pour egg mixture into flour mixture and stir. This will feel much like pastry dough. Work together into a firm ball. Knead a minute or two.

Place ball of dough on your bread board and roll as thin as possible. One pasta book suggest you should be able to see the board through the dough. The dough is tough and, although almost transparent, will still handle well. Slice the noodles into very thin strips or, if using for lasagne, into 1-1/2” x 4” rectangles. The pasta is now ready to cook, or to freeze uncooked for later use.

Cook the pasta in salted boiling water to which 1 tablespoon of oil has been added for 10 to 20 minutes depending on the thickness and the size of your pieces. You will have to test for doneness.

Makes 3 servings as noodles alone, 5 to 6 servings in a mixed casserole.

Spaghetti: Use the spaghetti cutter on your pasta machine. If you don’t have a pasta machine refer to our online catalog or, roll the dough very thin and cut your spaghetti as narrow as possible. This may turn out a bit uneven, but no one will notice when it is hidden under spaghetti sauce. Cook for 10 minutes in boiling salted water to which a tablespoon of oil has been added.

Chow Mein Noodles: Make the pasta and cut as if for spaghetti. Then cut these strips into 1- to 1-1/2” pieces. Drop uncooked into hot oil and cook for a few seconds (they will probably take less than 1 minute). Remove from oil and drain on paper towels. Then use immediately or freeze.

Makes about 5 cups chow mein noodles.

These waffles have a great flavor and are light, crispy and just plain yummy! I used my Belgium waffle maker and it made about 7. This recipe was not tested by Bob's Red Mill. Gluten Free, High Fiber, Soy Free.

  • 1-3/4 cups GF All Purpose Baking Flour
  • 2 cups Milk
  • 2 Tbsp Apple Cider Vinegar or White Vinegar
  • 1/2 tsp Salt
  • 1-1/2 tsp Baking Powder
  • 2 Eggs
  • 1 Tbsp Coconut Oil or Grapeseed Oil
  • 1 pkg Pure Stevia Extract Powder (White)
  • 1/4 tsp Xanthan Gum
  • 1/2 tsp Ground Cinnamon

Mix well milk and vinegar together. All all other ingredients into mixer and set on slow. Once milk is ready, add to the mix. The make waffles according to your waffle machine.

Eat yummy waffles!
